Schramsberg Vineyards, founded by Jack and Jamie Davies in 1965, is renowned for its commitment to crafting world-class sparkling wines. The historic property, featuring a 19th-century Victorian mansion and underground cellars, was revitalized by the Davies, who aimed to produce exceptional sparkling wines, including the pioneering 1965 Blanc de Blancs, the first commercial use of Chardonnay in American sparkling wine.
The 1965 Blanc de Blancs was the first American sparkling wine made entirely from Chardonnay, and Jack and Jamie Davies revived this 19th-century property to produce it. The Cave Tour with All Sparkling Wine Tasting walks guests through underground cellars where riddling racks hold bottles aging on their lees, then pours five sparklers including library releases.

The Victorian mansion dates to the 1880s and sits above tunnels hand-carved into Diamond Mountain during the same era. Jack and Jamie Davies bought the abandoned estate in 1965 and expanded the original caves to house their sparkling wine production. Visitors descend into the cool passageways lined with stacked bottles, where guides explain méthode champenoise before leading groups back up to the tasting room.
The Cave Tour with All Sparkling Wine Tasting ($90) includes five sparklers poured after a walk through the cellars. Guides explain riddling and disgorgement in the caves, then pour wines that might include Blanc de Blancs, Blanc de Noirs, and reserve cuvées. The Cave Tour with Reserve Wine & Cheese Pairing ($140) adds artisan cheeses alongside limited sparkling and still wines from Davies Vineyards.
