Jesse Katz makes estate wines from Dry Stack Vineyard on a working animal rescue farm.
Aesthete Winery & Farm is renowned for its commitment to crafting premium wines from the unique terroir of Dry Stack Vineyard, under the meticulous guidance of acclaimed winemaker Jesse Katz. The winery, founded by Sonoma County natives Jeff and Hilary Jones, combines a passion for winemaking with a dedication to sustainability and animal rescue, creating a distinctive experience for visitors amidst beautiful farm and garden settings.
Winemaker Jesse Katz crafts each vintage from Dry Stack Vineyard and holds release until he deems them ready to drink. Founders Jeff and Hilary Jones run an active animal rescue operation on-site, so tastings unfold alongside farm life.

Dry Creek Valley farmland surrounds both tasting areas: the main indoor space and an outdoor patio near the creek. Rescued animals roam the property, visible from seating areas. Gardens and vineyard rows frame the creekside zone, where picnic tables and open lawn accommodate kids and dogs alongside wine guests.
The Introductory Tasting ($40) pours current releases on the patio or inside, while the Creekside Tasting ($40) moves the same lineup outdoors near the water, where outside food, children, and pets are all welcome. Staff pours estate wines—Sauvignon Blanc, Pinot Noir, and Perspective Red Blend among them—with context on Katz's winemaking decisions and the vintage each was held back until release.
