The Collector's Experience pairs four Cabernet Sauvignon vintages spanning from the early 2000s to current releases, all in the caves with an Estate Ambassador. It's the only tasting here where you can taste how FAY and S.L.V. fruit evolves across decades, not just a single vintage snapshot.

The Stags Leap Palisades rise directly behind the FAY and S.L.V. vineyard blocks, a wall of volcanic rock that defines the district's eastern edge. Tasting tables face these named vineyards, so guests see exactly where the grapes in their glass were grown. The caves cut into the hillside host the Estate Experience and Collector's Experience, while the Cellarius Kitchen anchors the Large Party Estate Experience for groups of seven to fourteen.

The Signature Wine Tasting seats guests at private tables overlooking the vineyards for a four-wine flight that includes both FAY and S.L.V. signatures. The Estate Experience moves into the caves for a tour, then a seated tasting of limited production wines including Cask 23, with artisanal cheese and charcuterie.
