Del Dotto Estate Winery & Caves, established in 1989, is renowned for its unique winemaking philosophy that emphasizes the use of hand-selected French and American oak barrels to enhance the terroir of its wines. The winery offers an exclusive futures program, allowing guests to taste current vintages directly from the barrel, creating what they describe as 'Liquid Art'—a rare and limited production of wines that reflect the family's 800-year winemaking legacy.
The Cave Experience & Barrel Tasting pulls wine directly from French and American oak barrels, letting visitors compare how cooperage shapes the same vineyard fruit before it's bottled. Del Dotto's futures program means many pours come from wines not yet released, a working cellar rather than a polished showroom.

The caves run deep under the property, their walls and arches finished in bright marble and hung with chandeliers blown on Murano. Rows of barrels line both sides, close enough to touch, with tasting stations set up between them. Above ground, the Venetian Estate echoes the family's Italian roots, built to recall the grandeur of Venice rather than the barn-and-farmhouse aesthetic common elsewhere in St. Helena.
The Cave Experience & Barrel Tasting ($120) starts as a communal standing pour, moving barrel to barrel in the marble-lined caves before settling into a seated finish with house-made pizza and the winery's signature tater tots. The Delicacies Wine & Food Pairing ($225) follows the same cave route, then shifts to an elevated culinary pairing at table. Guides pull samples with wine thieves, demonstrating how oak selection alters a wine's trajectory before bottling.
